Argh! Why do my recipes have such long names?! I guess I’m not creativeenough to think of clever names for them, so I just sort of list the ingredients and hope it sounds recipe-worthy 🤣🤷🏻♀️
Finally started to cool down here in Texas, so I get ready to start making all the fall things! I didn’t nail the photos here, but the recipe is 💯. I promise.
For my first fall-y thing I figured I’d start with this Chai Chi Caramel Apple Parfait. My daughter LOVED this, the boys, well… they’ll learn to love it.
PS- Chai Chia… say that 5 times fast🤣
I found the original recipe from @healthylittlevittles and played around with a couple variants of this, but this was my fav. I love love love chai flavors and it went so nicely with the chia pudding, the original recipe for this was from Mark Sissons book, Keto Reset Diet. Add on the caramel apple bit and phew! You have yourself a moment.
Here’s what you do:
Chai Chia Pudding (adapted from Keto Reset)
1/4c Chia Seeds
1c Coconut Milk (I used canned)
1 tsp vanilla
1 tsp chai spice (cardamom, cinnamon, nutmeg, allspice and cloves)
Caramel Sauce (Vegan)
1/4c Coconut oil
1/4c Maple Syrup
2 tbsp almond butter
1/2 tsp vanilla
Pinch pink salt
Dry apple chips
1. Mix Chia pudding in a mason jar and let thicken (I let it thicken over night)
2. Heat coconut oil and maple syrup over med heat until bubbly. Whisk in almond butter, vanilla and salt.
3. Pour Chia Pudding into a cup, then top with apple chips!
Adaptation- I LOVE apples and peanut butter, so I used peanut butter instead of almond butter for the caramel in one variation. Gives it a big PB flavor, but again, I love PB+ apples so it worked for me. Don’t recommend the chai chia though. WAY too many flavor profiles going on, so go with a plain or vanilla chia pudding.
