Ok. Do y’all remember those cookies you made with your mom over the stove and they didn’t require baking and it totally blew your mind? Or at least it blew my mind. They were so GOOD! Chocolate (y), Peanut Butter(y) and melt in your mouth(y).
So many fond memories. I decided to make them with my kids with my neighbors recipe and they loved them. And so did I… a little too much. I tinkered around with the sugar/butter ratio and even experimented with different sugars until I found an acceptable healthy(ish) makeover.
I know. I’m sorry. I went there. I did it. But they’re yummy! I promise! It also makes like a ZILLION cookies. Ok, maybe more like 30, but it’s a lot.
What you will need:
Ingredients:
1.5C Brown Sugar*
1/2C milk
1/2 stick GF butter
4tbsp Cacao Powder
1/2C smooth peanut butter**
3C quick cooking oats
1tsp Vanilla Extract
* I have also successfully used 1C brown sugar and 1/2c Erythritol for fewer calories
** I have also successfully used almond butter here for a change up
Directions:
1. In a med sauce pan combine sugar, milk, butter and cacao. Bring mixture to a FULL boil and let it boil for 1.5 min. Don’t go less than that! And make sure you start the time after the mixture is already boiling.
2. Remove this mixture from the heat and immediately add your peanut butter, vanilla and your oats.
3. Stir mixture until well combined and then spoon onto parchment paper to let them cool. 😎
Very tasty and perfect for a snack this recipe is also very easy to do because it does not require cooking!

This looks pretty easy to make and I love how oats are added too. Oats is a healthy ingredient. This will be good when I crave for dessert.
