Dairy Free PB Ice Cream


No ice cream maker needed! Although, you could use one if you had one. This recipe is as easy as it is delicious. It does require a bit of time, but what ice cream doesn’t? I was really craving something cold and peanut buttery, so I started puttering around in the kitchen and came up with this:
2 cups unsweetened vanilla almond milk
5 dates
2 tbsp almond butter (or PB)
pinch salt
1/2 of a ripe banana
Throw all of these ingredients into a Vitamix blender and gradually increase the speed from 1-10 and leave it at 10 for 10 seconds. This just ensures that the mixture is homogenous and there are no big chunks of dates in the mix.


Pour mixture into ice cube trays and let freeze. Take out and let thaw for 5 minutes. Place cubes in Vitamix again and blend. Voila! Ice cream. If you let it thaw for longer, or microwave it for 15 seconds, you will have a delicious PB shake.
