Gosh I love waking up at 4:30 to go work out! It’s such a great, efficient use of my time. Carpe Diem.
This was day 1 of my attitude adjustment/attempt to stop complaining about the early rising. Maybe a tiny bit sarcastic, but hopefully sounds positive.
I didn’t feel like the lemon water again, so I had coffee with chicory. This seems to give me more energy for my work outs, which is good, but I really don’t want to become addicted to caffeine! Maybe tomorrow I’ll just try “brewing” the chicory and we’ll see what happens.
After the morning workout I had a banana and 2 kale egg muffins. Maybe next week I’ll switch this up, but it’s just so good! It’s nice to have a bit of a routine, especially one that tastes good, so you can look forward to it!
Lunch was another stuffed pepper, 2 stuffed collards and the rest of my mac and cheese creation.
Snack was an apple and a handful of slivered almonds.
Dinner was leftover pulled pork and plantains. So yummy.
I got really hungry again around 8:00, so I had another snack. I’m probably not supposed to do this, but I didn’t want to eat anything heavy, and I knew I was probably thirsty too, so I made a “shake” of sorts. I combined 1 cup of unsweetened coconut milk, 1-2 tbsp of almond butter (rough estimate), a handful of carrots 5 dates and about 10 ice cubes in my vitamix and blended away. It made a kind of carrot cake tasting “shake” which I know isn’t Whole 30, but it was with allowable ingredients, so I think that’s a good middle ground.
