Whole 30 Day 15

And we’re back to the work week. This week is exciting though because it’s a short (work) week and Sunday is Mothers Day! My second mothers day as a mommy. Very exciting :). I wonder what Quint will do to make it special ;). Maybe he will make more messes like this:

Anyhow, I started my day at 4:30am with my usual hot water with lemon. After I worked out I had a banana with some bitter black coffee, followed by 2 kale egg muffins.

For lunch I had some more “Chicken Lo Mein” and an apple.

For snack I had baby carrots and a handful of almonds.

Dinner was really yummy. I decided to try my hand at plantains for the first time and it was a success! I found this recipe on thefoodie.com called pulled pig over plantains and decided to try it. It seemed simple enough. The recipe called for pork shoulder, but all I had was plain pork tenderloin. I rubbed the tenderloin down with a little salt, pepper, paprika and garlic and cooked that in the slow cooker for about 6 hours the night before. That way, all I had to do Monday was cook the plantains and that was super easy. I bough 2 ripe yellow plantains, slit them down the middle and baked them in the oven at 350 for 1 hour.  Then I mashed the plantains and shredded the pork tenderloin over the plantain. It was delicious. The saltiness of the tenderloin worked really well with the tangy, subtle banana-esque sweetness of the plantain. I could have eaten all of it, but Quint ate a whole serving himself, which was awesome!

Next time I will try to use the shoulder though. The tenderloin is just so lean, it tends to get a bit soft when you slow cook it with onions and any liquid. I think it’s a combination of the salt and the water that just breaks down the lean protein of the tenderloin.
