Whole 30 Day 12

This is starting to get a little monotonous. Maybe I need to come up with a better way to jazz up my posts. Or maybe I am just tired from the week.

Anyhow, for breakfast I didn’t feel like hot lemon water so I just had my usual coconut latte and 4 carrot pancakes.

I had an apple with almonds for a snack.

I ate lunch really late and had 4 more of those paleo burritos/stuffed collard greens. Finally ate the last of those things. They lasted forever!

Today ended up being a really bad day for several reasons and I didn’t get home until about 6:30. I am beginning to think a diet/way of eating that is as strict as the Whole 30 might not be a great fit for me right now since I leave the house at 5am and don’t get home until 5:30 or 6. It is just becoming kind of difficult to plan and prepare meals for the week. And it leaves a small room for error. I usually try to prepare meals for breakfast and lunch throughout the week on Sunday, but this week I ran out of those pancakes and tonight I ruined dinner pretty badly and just ate a sandwhich and a banana with almond butter because I was hungry and exhausted. I also had a piece of chocolate afterwards. UGH. So that makes the second day that I’ve not followed the Whole 30 and I’m only on Day 12. I think I am going to try and keep trucking along to at least track my progress, and if (when) I stray from the plan I’ll maybe post a paleo option just in case I want to revert back to a meal plan. I’ll also try to make my meals as paleo as possible.

And no pictures today. I just didn’t eat/cook anything exciting. I was supposed to have fish, but it was terrible. The fish was mushy and just gross. I have no idea what I did wrong, but here is what it was supposed to be! I think mine came out bad because I didn’t use salmon and I tried to throw the kale in with the mahi mahi and bake it all together hahaha. It was really watery and the fish was mushy. Pretty much inedible.
