Back to the grind!

My 4:30 am breakfast drink was hot water with lemon again. It hasn’t gotten hot enough (yet) to where that drink is un-drinkable in the wee hours of the morning.

My 9:00am breakfast was my coconut milk latte, a banana and 3 carrot pancakes. I was pretty hungry for some reason.

For lunch I had 4 of those leftover paleo burritos/stuffed collard greens and cherry tomatoes.

My mid-afternoon snack was a mango. I totally forgot to pack the nuts! This time it was supposed to be cashews, oh well I guess I will have them for later.

Dinner was exciting because I was able to try a new recipe! Well, I guess it wasn’t really a “recipe,” it was kind of a concoction I threw together to mimic the Chinese dish “Beef and Broccoli,” but it was pretty darn good. I had it with some baked, then mashed plaintain. Sounds like a weird combo Mexican and Chinese, but it was good! The saltiness from the soy tasted really good with the subtle sweet tanginess of the plaintain.
Recipe:

1 head of broccoli, broken into florets
1 small container of mushrooms
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp ginger
soy sauce (optional-to taste)
Marinate Laura’s beef in sesame oil, soy sauce and ginger for 30 minutes. Saute beef until the outsides are cooked. Add broccoli florets and cook for 5-7 minutes. Add mushrooms and cook for another 5 minutes. I added a bit more soy sauce with the mushrooms for more flavor.

To prepare the plaintain, I just slit it down the middle, baked it at 350 for 1 hour then mashed it with a little coconut oil.
I am not sure I am getting enough calories in during the day because I always seem to be hungry after dinner. I might have to start counting the calories to make sure I am getting enough during the day. I really can’t stand counting calories because it is so annoying, but I want to see if I am just being “munchy” at night, or if my body really does need something extra. Anyhow, my post dinner snack was a lot of carrots and almond butter. I even had another banana and some cashews because I forgot about the one I ate for breakfast. Oh well. I had a lot of almond butter too, which probably wasn’t super healthy.
