Day 2 was a little more exciting. It was a weekend and I had the time to cook!
Breakfast:
Sweet potato plus a mushroom-spinach egg scramble (I just sautéed the mushrooms and spinach in some olive oil and a bit of kosher salt until the spinach wilted and added 2 whisked eggs).
Lunch:
Wilted spinach and kale salad with boars head cracked black pepper turkey and a handful of almonds
For the salad, I just sautéed diced red onions in a pan with olive oil, added kale and let that cook so the kale could soften. Then I added a handful of porcini mushrooms and spinach. I salted it a bit, sprayed some olive oil on top with my Misto sprayer and squeezed a lemon over top. Then I just folded all the ingredients and let it cook for a couple more minutes. I wanted it to be warm, but I didn’t want to wilt the spinach. I hit it with another squeeze of the leftover lemon, a spray of olive oil and some cracked black pepper. Then I put the turkey on top.
Snack:
Grapefruit and handful of almonds
Dinner:
Jambalaya! I found a recipe for Whole 9 jambalaya using steamed cauliflower pulsed to make “rice.” I also used organic, nitrate free chicken andouille sausage. Very yummy. I couldn’t find the “bell pepper blend” but it was great without it!

Cauliflower “rice” |
1 head cauliflower(for the rice)
1 package sausage (nitrate, gluten chicken sausage)
1 green bell pepper
1 yellow onion
2 cloves garlic minced
1 can diced tomatoes
3 tbs extra virgin olive oil + 1 Tbs.
1 bay leaf
1 1/2 bell pepper blend(I got this from the spice section at Central Market, it dried peppers)
1 Tbs. garlic powder
1/2 Tbs. paprika
1 tsp. cayenne pepper
1/2 tsp thyme
1 tsp oregano
“Rice”
Break cauliflower into large pieces and steam until soft but not mushy, about 10-15mins. In small batches, put steamed cauliflower in food processor and pulse-chop, or chop up with a fork until it looks like rice. This only takes a few pulses/chops to get the rice-like texture, be care not to over chop or you will have mashed cauliflower instead.
Heat 3 Tbs. oil a large skillet or pot. Chop bell pepper and onion in food processor, if you don’t have one (I still don’t know why you haven’t bought one) chop by hand and add to pot. Sautee peppers, onion and minced garlic. Cut sausage into medium circles and add to sauteed veggies along with bay leaves, cook on medium heat for about 10 mins. Next add “rice”, spices, tomatoes and 1 Tbs. oil and mix until seasoning is evenly distributed. turn heat down and let simmer for 10 to 15 min.
