Walnuts, dates and unsweetened cocoa. Blended, no baking. That’s all there us to these delectable little brownie bites.
I never knew there were so many things you could do with a nut! I know they are very nutritious and delicious in their various forms and add great flavor and texture to dishes, but I didn’t know you could completely transform and manipulate them with other ingredients into something completely unrecognizable. Very cool.
In my recent foray into food blogging I have discovered 2 food blogs I absolutely love. One is “my new roots” blogspot and ani phyo’s raw food blog. I am not a raw foodist, or even a vegetarian, but these blogs make me want to give it a try. If food can be this delicious following these schools of thought, it makes me think life could be very rewarding and adventurous finding ways to make delicious recipes from raw wholesome ingredients. This sprouted my inspiration for trying and adapting Sara B’s raw brownie recipe from the “my new roots” blogspot.
1 cup walnuts
1 cup dates (I could only find dole, but I hope to order and try the famous Medjool dates soon!)
1/2 cup raw cacao powder or Hershey’s dark chocolate cocoa powder
Pulse the walnuts in a food processor until finely chopped. Add cocoa powder and pulse until incorporated. Add the dates one at a time until the mixture is a “cake crumb like” consistency. Scoop out spoonfuls and roll info little brownie balls. Shoot, stick a “cake pop stick” in there and it will be a brownie pop. Waaayyy better than any cake pop.
