This is one of my lazy morning easy go to “gourmet” (or so my husband thinks) breakfasts. You can put anything in there, but here is what I like to make it with!
Ingredients (makes 2 small ramekins):
2 eggs
2/3 cup whole milk
1/2 cup shredded cheddar cheese
Handful of sausage, crumbled, cooked and patted dry
(I do this to get rid of some of the grease)
1/4 green bell pepper, chopped
1/4 cup chopped onions
1/4 cup chopped tomatoes
1-2 slices bread
Note: I use a thick slice of my homemade soft white wheat flax bread so I only use 1 slice, nut it is very dense. My measurements are also pretty rough. I prefer the handful, pinch and dash type measurements :).
Spray ramekins with butter flavor spray. Crumble bread on bottom. Sprinkle sausage, green pepper, onion and tomatoes on top.
Beat 2 eggs, add milk and mix together. Add cheese.
Pour egg mixture over ramekin concoction. Let sit for an hour (you don’t have to do this, but it let’s the bread really soak up the mixture and then when it bakes it’s really fluffy). Bake at 375 for 45 minutes.
I often have the ingredients pre-chopped from other recipes or from left over dinners in the fridge. I’ve also made this with leftover ham, hamburger and different cheeses. Great opportunity to do your own thing with this recipe. You could even make this vegetarian, use tofu, lo-carb bread or egg whites if you are watching your weight or just want to be really healthy!
